A hybrid immersion and percolation recipe prioritizing sweetness and consistent extraction.

Adapted from Lance Hedrick's Switch gong fu method (three immersions, Samo bloom).

Method

  1. 01

    Close the valve. Pour 50g of 75°C water into the empty Switch, then add 15g coffee and saturate.

  2. 02

    After 90 seconds, drain fully. Close valve and pour 100g of 90°C water over a spoon onto the bed.

  3. 03

    Drain, repeat a second 100g immersion, then open and finish drawdown around 5:00 total.
