Hybrid immersion and drip with mid-brew temperature switching for layered sweetness and acidity.

Adapted from Emi Fukahori's 2018 World Brewers Cup winning technique (80°C → 95°C → 80°C).
Method
- 01
Close the valve. Pour 50g of 80°C water and steep for 45 seconds.
- 02
Pour 100g of 95°C water over 60 seconds with the valve still closed.
- 03
Pour the final 70g at 80°C, open the valve, and finish drawdown around 2:55.
